This Keto Taco Casserole is loaded with cheesy taco goodness without any of the carbs. It's super-easy, extremely hearty, and it's got a lovely little kick from the Jalapenos

Preheat your oven to 200°C. Finely dice the onion and heat olive oil in a large skillet over medium heat. Add the onion to the skillet and cook until slightly softened, approximately 2 minutes.
Add the ground beef to the skillet and season with salt and pepper. Cook, breaking up meat with a wooden spoon, until no longer pink, approximately 6 minutes.
While the meat is cooking, dice the jalapenos. In a separate bowl, lightly whisk the egg.
Sprinkle the taco spices and jalapenos into the meat and cook, stirring, until spices are lightly toasted, approximately 1 minute. Then, drain any excess liquid from the beef and allow to cool slightly.
Add the whisked eggs to the cooled meat and stir to combine. Spread this mixture into an even layer in the bottom of a baking dish. Grate cheese on top of the mixture.
Place the baking dish in the oven and bake until set, approximately 15 minutes. Carefully remove from the oven, sprinkle with parsley and top each slice with a dollop of sour cream if desired. Enjoy your meal!
