    Begin by slicing the shitake mushrooms, julienning the red capsicum, and roughly chopping the bok choy.

    Prepare a miso glaze by mixing together miso paste, honey, and mustard in a bowl.

    Coat the steak with half of the miso mixture and set aside.

    Heat oil in a frying pan over medium-high heat. Add the steak and sear for 3 minutes on one side, then turn and cook for an additional 3-4 minutes (for medium-rare) or until cooked to your liking.

    Once the steak is cooked, remove it from the pan and allow it to rest for a few minutes.

    In a wok, heat olive oil over high heat. Add the snow peas, bok choy, and red capsicum. Stir fry for 1-2 minutes.

    Incorporate the sliced shitake mushrooms and a splash of water. Continue stir frying until the vegetables are tender crisp. Stir in the remaining miso mixture.

    Divide the stir fry among serving plates. Slice the steak and arrange it on top of the stir fry. Serve and enjoy!

Super easy to follow and tastes good. Note: recipe doesn’t say when to add book choy, so I added it just after the mushrooms and rest of the miso mix.
